√ Healthy Breakfast Bread Recipes

Ingredients

  1. 2 tablespoon Chickpea flour
  2. 1 tablespoon ground cinnamon
  3. 1/2 tablespoon mixed spice (or pumpkin pie spice mix)
  4. 1/2 cup rice milk (or dairy-free milk of choice)
  5. 1 tablespoon vanilla extract
  6. 1 pinch salt
  7. 1 tablespoon vegan butter or mild-flavoured oil
  8. 4 thick slices of soft bread (white or wholegrain / gluten-free, if neeed)

Steps

  1. Whisk the chickpea flour, spices, milk, vanilla and salt together in a shallow container.  
  2. Gently heat the butter or oil in a skillet.  
  3. Dip a slice of the bread into the mixture and coat well on each side. Place in the skillet and fry on medium heat for a minute on each side until golden brown.  
  4. Repeat with the other slices.  
  5. Serve with fruit, maple syrup, berries, yoghurt… and enjoy 🙂
