√ Healthy Pumpkin Bread Recipe

Ingredients

  1. 1 cup unbleached all-purpose
  2. 1 cup whole wheat flour
  3. 1 tablespoon pumpkin pie spice
  4. 1 teaspoon baking soda
  5. 1 teaspoon baking powder
  6. 1/2 teaspoon salt
  7. 15 Oz pumpkin puree
  8. 1/2 cup sugar
  9. 1/4 cup honey
  10. 1/2 cup plain Greek yogurt
  11. 2 large eggs
  12. 6 tablespoons coconut oil, melted and cooled

Steps

  1. Preheat oven to 350. Line a 9 x 5 loaf pan with two sheets parchment paper to ease removing bread out of pan.  
  2. In large mixing bowl, combine the flours, pumpkin pie spice, baking soda, baking powder, and salt. Whisk to combine  
  3. In a medium mixing bowl, combine pumpkin puree, sugar, honey, yogurt, eggs, and coconut oil. Stir to combine  
  4. Transfer the pumpkin mixture into the flour mixture. Fold until combined.  
  5. Pour batter into lined loaf pan. Bake for 60 minutes until toothpick comes out with a few crumbs. Cool in pan for 10 minutes, lift out of pan and cool on rack for another 10  
  6. Wrap bread in plastic wrap and store at room temperature for up to 3 days
