Ingredients
- 1 cup unbleached all-purpose
- 1 cup whole wheat flour
- 1 tablespoon pumpkin pie spice
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 15 Oz pumpkin puree
- 1/2 cup sugar
- 1/4 cup honey
- 1/2 cup plain Greek yogurt
- 2 large eggs
- 6 tablespoons coconut oil, melted and cooled
Steps
- Preheat oven to 350. Line a 9 x 5 loaf pan with two sheets parchment paper to ease removing bread out of pan.
- In large mixing bowl, combine the flours, pumpkin pie spice, baking soda, baking powder, and salt. Whisk to combine
- In a medium mixing bowl, combine pumpkin puree, sugar, honey, yogurt, eggs, and coconut oil. Stir to combine
- Transfer the pumpkin mixture into the flour mixture. Fold until combined.
- Pour batter into lined loaf pan. Bake for 60 minutes until toothpick comes out with a few crumbs. Cool in pan for 10 minutes, lift out of pan and cool on rack for another 10
- Wrap bread in plastic wrap and store at room temperature for up to 3 days
