√ Yellow Squash Bread Recipe

Ingredients

  1. 3 small yellow squash-cubed
  2. 6 slice bacon-cooked and chopped
  3. 1/4 cup red onion-diced
  4. 1 cup sliced mushrooms, including stems
  5. 1/2 cup teriyaki sauce
  6. 2 cup prepared stuffing mix
  7. 1/2 tsp granulated garlic
  8. 1/2 tsp ground sage
  9. 1/4 tsp salt
  10. 1/2 cup parmesan cheese-grated plus 1/4 cup for topping
  11. 1/3 cup seasoned bread crumbs
  12. 1 tbsp dried parsley pkus a dash of parsley for topping garnish

Steps

  1. Preheat oven to 350º.  
  2. Add squash, mushrooms and onion to large skillet.  
  3. Add teriyaki sauce, garlic, salt, parsley and sage.  
  4. Cook until mushrooms are softly cooked over medium heat.  
  5. Put prepared stuffing in a large bowl.  
  6. Cut bacon into small pieces.  
  7. Add bacon, stuffing mix and squash mixture into large bowl. Mix well.  
  8. Add 1/2 cup parmesan. Mix well.  
  9. Put mixture into a 8×9 baking dish sprayed with non-stick cooking spray.  
  10. Dust the top of mixture with bread crumbs and 1/4 cup parmesan cheese. Add a dash of parsley for color. Bake for 30-35 minutes.
